To celebrate the farm’s chef Daphne Lambert has created the perfect mulled wine recipe using a couple of unexpected ingredients from the farm (or your own garden or windowbox!). It’s the perfect way to warm things up on a cold day.
In addition, when drunk in moderation, and thanks to its antioxidant polyphenols, red wine has been shown to help protect the heart, prevent blood clots and strokes, and even ward off certain cancers including colon and prostate. Adding spices such as cinnamon, ginger and rosemary boosts antioxidant levels even more, and may help fight off colds and other seasonal viruses. For extra benefits make sure the wine is organic.
Ingredients
Method
1 Put the spices, herbs and lemon peel in a stainless steel pan add half the red wine and bring to just below boiling.
2 Simmer very gently for 10 minutes.
3 Remove from the heat and leave to infuse for an hour.
4 Add the honey, the rest of the wine and the brandy and gently heat but do not boil. Strain and serve.
